Nutrition:Concepts and Controversies has clear wording and extensive descriptions for most of it's subjects. It explains subjects in a way that is interesting and not just scientific. There are also controversy sections at the end of each chapter which give you both sides of current health arguments.
This book is very helpful outside of class too because there are many charts such as the DRI, UL and BMI that you can use the determine if you are getting adequate nutrients.
